Keeps pretty well in the fridge for a couple of days
Ingredients
- splash of olive oil
- one onion red or white
- salt/pepper
- can of tomatos
- can of butter beans or cannelini beans (or similar)
- 1/2 tsp sugar
- Fresh Basil (other herbs e.g chives) if you have any
- sour cream/soy cream as garnish
- Dice onion and brown in sauce pan/large frying with olive oil and a sprinkling of salt
- When ready add can of tomatos and sugar
- Drain and wash can of beans (you can totes use dry beans that have been soaked over night but we're never that organised) add to pan
- Simmer down adding herbs (if you are adding any)
- Season to taste (sometimes we chuck in a bit of tobasco or similar to add some pep)
- Blend till smooth (so the more you simmer it down the thicker it gets)
- serve with a dollop of sour cream or soy alternative and chives/basil leaves to garnish and wholegrain toast
